Tomato Sauce


Simple, wholesome and full of flavour, this homemade tomato sauce is a versatile staple for heart-healthy cooking. Made with fresh ingredients and no added sugar, it’s perfect for pasta, casseroles, or as a base for your favourite dishes.
Ingredients
- At least 9 tomatoes
- 2 large onions
- 3 red peppers
- 4 cloves of garlic – not peeled
- A couple of glugs of olive oil
- 2 tsps of dried basil
Method
- Quarter at least 9 tomatoes
- Quarter 2 large onions
- Quarter 3 red peppers
- Put into a roasting pan with 4 cloves of garlic – not peeled
- Toss everything in the oil and roast at 180 for approx 45 mins
- Squeeze the garlic out of its outer cover
- Blitz with fresh basil (roasting will make it bitter)
- Season to taste .. sometimes I add smoked paprika, sometimes chilli .. or not …
The roasting adds depth to this rich tomato sauce and it’s a great base .. I then freeze the portions and use it when needed .. a whole box used this way makes loads of sauce and no stirring at the stove top .. I learnt this when I lived in Spain and it’s the only way that I make tomato sauce now.
