Tomato Sauce

Simple, wholesome and full of flavour, this homemade tomato sauce is a versatile staple for heart-healthy cooking. Made with fresh ingredients and no added sugar, it’s perfect for pasta, casseroles, or as a base for your favourite dishes.

Ingredients

  • At least 9 tomatoes
  • 2 large onions
  • 3 red peppers
  • 4 cloves of garlic – not peeled
  • A couple of glugs of olive oil
  • 2 tsps of dried basil

Method

  • Quarter at least 9 tomatoes
  • Quarter 2 large onions
  • Quarter 3 red peppers
  • Put into a roasting pan with 4 cloves of garlic – not peeled
  • Toss everything in the oil and roast at 180 for approx 45 mins
  • Squeeze the garlic out of its outer cover
  • Blitz with fresh basil (roasting will make it bitter)
  • Season to taste .. sometimes I add smoked paprika, sometimes chilli .. or not …

The roasting adds depth to this rich tomato sauce and it’s a great base .. I then freeze the portions and use it when needed .. a whole box used this way makes loads of sauce and no stirring at the stove top .. I learnt this when I lived in Spain and it’s the only way that I make tomato sauce now.
