Healthy Flapjack

A healthier version of the flapjack. They will stay fresh for 4-5 days in an air tight container, out of sunlight so they don’t sweat.

Ingredients

4 over-ripe bananas
2 tablespoons of organic/natural honey
300g organic jumbo oats
A sprinkle of cinnamon

Method

  • Preheat oven to 180
  • Mash the bananas in a mixing bowl (it does not have to be smooth)
  • Add the honey and mix thoroughly.
  • Now add the oats and make sure you give them a good mix to cover everything. Add a sprinkle of cinnamon or mixed spice if you prefer.
  • Place the mixture in a lined baking tin.
  • Place in the oven and bake for 20 minutes.
  • Once baked, leave to cool before turning out onto a cooling rack.
  • Once completely cooled, slice into finger slices and enjoy.
  • If you wanted, you could add dried fruit or even chocolate chips; you would only need 100g.
