Ingredients

1 fairly thick slice of crustless white bread (I don’t use white bread)
375 ml milk
25 ml olive oil
10 ml butter
2 onions chopped
3 cloves garlic, chopped
25 ml curry paste
10 ml salt
25 ml Mrs Balls chutney
15 ml smooth apricot jam
15 ml Worcester sauce
5ml turmeric
25 ml malt vinegar
1kg ground steak
100 ml sultanas
3 eggs
Pinch salt
Pinch turmeric
Bay leaves

Method

  • Soak bread in milk.
  • Heat butter and oil in a large pan. Soften the onions til translucent, then add curry paste, salt, chutney, jam, Worcester Sauce, turmeric and vinegar. Mix well.
  • Keep on low heat & stir.
  • Drain the bread and add it to the mixture in the pan. Reserve milk.
  • Add mince and sultanas. Turn up heat and cook til brown.
  • Remove from heat and stir in one beaten egg. Mix well and spoon into the baking dish.
  • Beat remaining eggs and reserved milk (300 ml plus); add salt and turmeric. Pour over meat mixture and decorate with bay leaves.
  • Bake uncovered at 180 for approx one hour, the topping will be set.
  • Serve with turmeric rice, coconut, chutney and bananas. We also have mini naan bread with it, green veg and corn cobs, known as Mealies in Eswatini. Enjoy!
