Banana, apple and oat cookies

Naturally sweet and packed with fibre, these Banana, Apple and Oat Cookies are a guilt-free treat you can enjoy any time of day. Made without added sugar, they’re a heart-friendly option for snacking or a quick breakfast on the go.

Ingredients

  • 1 banana
  • 1 apple
  • 250g rolled or organic oats
  • 1/2 tablespoon cinnamon
  • 50g dried fruit, optional and choice is up to you
  • 50g of nuts chopped, optional and choice of nuts is up to you

Method

  • Mash the banana in a bowl, then grate the apple, once grated, squeeze out the juice, once the juice is squeezed, add to the banana.
  • With the oats, either add them straight in or I like to blitz them in the blender for a few seconds, just so they are broken down a little bit. Now add them to the other ingredients.
  • Now add the cinnamon and mix. If you want to be naughty, you can add 1/2 a teaspoon of 100% cocoa powder. Now at this stage if you are adding nuts, dried fruit or honey, place them in the bowl and mix again, leave the mixture to stand for 5 minutes so the ingredients all combine.
  • Preheat the oven to 170.
  • Use a tablespoon to spoon out the mixture onto a baking tray with baking paper and press into a round shape.
  • Bake in the oven for about 20 minutes, turn over at 10 minutes, but check after 15 minutes, they should be a golden brown colour.
  • Leave to cool on a rack for 5 minutes and then enjoy.
