Homemade Sweet and Sour Sauce

Make your own version of a sweet and sour sauce to add to your stir-fry.

Ingredients

  • 200ml pineapple juice (I use a couple of tinned pineapple rings if it’s easier and cheaper)
  • 100g of soft brown sugar (Demerara can be used but make sure it has completely dissolved)
  • 4 tablespoons of ketchup
  • 2 tablespoons of no/low salt soy sauce
  • 3 tablespoons of rice wine vinegar (you can use white wine or even apple cider vinegar)
  • 1 tablespoon of cornflour (mix cornflour in a small bowl with 1 tablespoon of cold water before use)

Method

In a pan on a medium heat, add all the ingredients apart from the cornflour and whisk until it starts to simmer.

Now add the cornflour a little at a time until it thickens to a consistency of your liking, I normally whisk till the sauce can stick to the back of a spoon.

You can slice the pineapple rings up and add to the sauce once it has been thickened.

You can also use red food colouring if you like to make the sauce a more take-away colour.
